Zucchini Casserole

A new recipe!  I'm always looking for new food ideas, so I was excited when my sister in law served this casserole at Thanksgiving.  As with any casserole, I tweaked the amounts of certain ingredients to my taste.

Zucchini Casserole

1 Cup Bisquick
3 eggs
1/3 Cup canola or veggie oil
3 Cups grated zucchini
1/3 Cup chopped red bell pepper
1 medium onion
1 Cup whole kernel corn
1/2 tsp salt
1/2 tsp pepper
1 tsp oregano
3/4 Cup parmesan cheese
Sprinkle of garlic powder
1/4 Cup parmesan cheese for topping (optional)

Directions:
Heat oven to 350 degrees.  Whisk Bisquick, eggs and oil.  Stir in grated zucchini, onion, bell pepper, salt, pepper, oregano, corn and parmesan.  Add a sprinkle or garlic powder and additional parmesan to top of dish.  Bake 30 minutes uncovered.  Cover and bake an additional 30 minutes.  Enjoy!
