Snickerdoodles that stay soft and chewy!

These are my new favorite cookies!  They are so fast to make and SO yummy!  They really seem to stay chewy and soft, but to be honest, they don't last very long around our house, so I really wouldn't know! :)


Ingredients:



Prep Time: 10 mins
Total Time: 20 mins

Directions:

  1.  Preheat oven to 350°F.
  2.  Mix butter, 1 1/2 cups sugar and eggs thoroughly in a large bowl.
  3.  Combine flour, cream of tartar, baking soda and salt in a separate bowl.
  4.  Blend dry ingredients into butter mixture.
  5.  Chill dough, and chill an ungreased cookie sheet for about 10-15 minutes in the fridge.
  6.  Meanwhile, mix 3 tablespoons sugar, and 3 teaspoons cinnamon in a small bowl.
  7.  Scoop 1 inch globs of dough into the sugar/ cinnamon mixture.
  8.  Coat by gently rolling balls of dough in the sugar mixture.
  9.  Place on chilled ungreased cookie sheet, and bake 10 minutes.
  10.  Remove from pan immediately.

Christmas

Yesterday was spent on a 7 hour road trip from Little Rock to Houston, pulling over every few hours for me to puke.  Needless to say, I'm thankful that has passed and I can enjoy our rare visit with Clay's family and eat solid foods again.  Missing those at home, but I will see you soon.  Hope everyone has a Merry Christmas and praying for safe journeys whether across country or across town.

For dinner tonight

This is one of my favorite recipes.  I don't remember where I got it but it is SO good!  I don't make it very often because it seems to take more time than most dinners... 

One chicken breast per person, thawed and flattened (so it will be easy to roll)
Large handful of fresh spinach per chicken breast
About 2 Tbl spoons of olive oil
Garlic
Feta cheese
Toothpicks

Directions:

Flatten the chicken with a meat hammer thingy
In a non stick skillet pour about 1 Tbls of olive oil
Crush fresh garlic to taste in oil and cook until fragrant (I like a LOT of garlic so I use about 3 large cloves)
Add spinach to hot skillet with garlic and cook until wilted (about 5 minutes) tossing constantly
Remove skillet from heat and add Feta cheese (again I like a lot, but use however much you want)
Spoon this mixture onto the middle of chicken breast and roll chicken around spinach and secure with toothpicks
Clean the skillet and add 2nd Tbls of olive oil
Add chicken and cook until brown
Remove to oven safe dish and finish cooking in oven at 350 degrees or until juices run clear
Remove toothpicks, slice if you care to (sliced it makes a beautiful presentation!) and serve!

Since this already has a green veggie included in it, I try to make a side that isn't green, sometimes squash or whatever you think will go well.  Enjoy!
